In need of a simple , last minute, Christmas recipe ? I have your back! this tasty mushroom soup!

You will need:

– 90g butter

– 2 onions

– 1 garlic clove

– 500g mushrooms

– 2 tablespoons of flour

– 1l chichen stock

– 1 bay leaf

– 4 tablespoons cream

– parsley

 

STEP 1

Heat the butter and, cook the onions and garlic until soft. About 8-10 minutes.

 

STEP 2

Add mushrooms and cook for 3 mins. Sprinkler tghe flour and stir to combine. Pour the chicken stock, bring the mixture to the boil, then add the bay leaf and simmer for another 10 mins.

 

STEP 3

Remove the bay leaf, then remove the mushroom mixture from the heat and blitz using a hand blender until smooth. Scatter over the parsley and serve.
